Recipe Ingredients for Pumpkin Bread

1 c. unbleached all-purpose flour
1 c. whole Wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 pinch nutmeg
3/4 c. pumpkin, canned unsweetened
1/2 cup liquid egg substitute or 4 egg whites
1/4 cup nonfat milk
1/4 cup banana, mashed
1/4 cup honey
1/2 cup raisins

Recipe Directions for Pumpkin Bread

  1. Preheat oven to 350 degrees F. Prepare a 9-inch loaf pan lightly sprayed with nonstick spray.

  2. In a large bowl, stir together unbleached flour, whole heat flour, baking powder, baking soda, cinnamon and nutmeg

  3. In another bowl, stir together pumpkin, egg whites, milk, banana, and honey.

  4. Add wet to dry and stir just until combined. Do not overmix.

  5. Stir in raisins.

  6. Transfer batter to pan and bake until toothpick comes out clean, 45 to 50 minutes.

  7. Remove from pan and cool before slicing.
