From Dorie Greenspan's "Baking: From My Home to Yours" Actually a pumpkin muffin recipe, where I skipped the raisins and nuts and did it in a 9x13 inch pan

Recipe Ingredients for Pumpkin Bread

2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon nutmeg
1/8 teaspoon allspice
4 ounces butter
1/2 cup sugar
1/4 cup light brown sugar
2 large eggs
1/2 teaspoon pure vanilla extract
15 ounces canned pumpkin
1/4 cup lowfat buttermilk

Recipe Directions for Pumpkin Bread

  1. Mix the dry ingredients (flour, baking powder and soda, spices).

  2. Cream the butter, add sugars, add eggs, add vanilla.

  3. Slow down the mixer, add can of pumpkin puree and buttermilk.

  4. Slowly add dry ingredients. Stop mixer and mix by hand at the end to prevent overmixing.

  5. Spread in a cooking-sprayed and floured 9x13 pan.

  6. Bake for about 30 minutes in a 350 degree oven.
