This bread turns out very moist and a little heavy. To lighten it up, try adding only pumpkin puree or half the amounts of pumpkin and apple sauce. You can also try adding 1/2 tsp baking powder, and perhaps double the egg whites.

Recipe Ingredients for Pumpkin Bread

1 cup wheat flour (400 calories)
1 cup all purpose flour (400 calories)
1 cup rolled oats (300 calories)
2 tsp baking soda
2 cups pumpkin puree (160 calories)
2 cups applesauce (360 calories in apple cinnamon sauce)
2 egg whites (50 calories in egg beaters)
2 tbsps cinnamon
1 tbsp ginger (grated)
2 tsps nutmeg
1 tbsp vanilla extract (40 calories)

Recipe Directions for Pumpkin Bread

  1. Mix the dry ingredients and wet ingredients together separately.

  2. Preheat oven to 350 degrees Fahrenheit

  3. Slowly stir in the dry mix into the wet mix, making sure to blend everything well

  4. Pour the batter/dough into loaf pans

  5. Depending on the size of the pans, bake for somewhere between 45 min (for shallower bread) to 75 minutes (for deeper or wider pans)

  6. Bread will be crusty outside and very moist inside
