This Alton Brown's recipe jazzed up to remove most all of the fat and more than half the calories!

Recipe Ingredients for Pumpkin Bread

1 1/2 cups whole wheat pastry flour
1/2 cup all purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
3/4 cup sugar
1/2 cup honey
3/4 cup apple sauce
4 egg whites
1 egg
1 teaspoon vanilla extract
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon ground ginger
3 cups pumpkin

Recipe Directions for Pumpkin Bread

  1. Preheat oven to 325 degrees and grease two loaf pans.

  2. Combine all the dry ingredients by sifting the flours, baking soda, baking powder, salt, and spices together in a bowl.

  3. In a separate bowl, combine the sugar, honey, apple sauce, egg, egg whites, and vanilla. Mix until well combined.

  4. Add the dry ingredients to the wet in three batches being careful not to over mix.

  5. Once combined, fold in the pumpkin.

  6. Pour batter into two greased loaf pans and bake at 325 degrees for 45-55 minutes or until a knife comes out clean.

  7. Remove from the oven and let stand for 15 minutes then remove to a cooling rack until completely cool.
