Recipe Ingredients for Pumpkin Bread

1 cup canned pumpkin (11846)
1/2 cup (softened) butter
3/4 cup maple syrup
2 eggs
1 3/4 cups whole wheat pastry flour
1 tsp. baking soda
1 tsp. baking powder (18369)
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/3 cup water

Recipe Directions for Pumpkin Bread

  1. Preheat oven to 350. Grease and flour a 9x5 loaf pan or line with parchment paper.

  2. Cream together butter and maple syrup. Add eggs, beating after each addition, and mashed pumpkin.

  3. In a separate bowl, sift together whole wheat pastry flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

  4. Combine wet and dry ingredients, adding 1/3 cup water.

  5. Bake at 350 for about 1 hour or until a toothpick inserted in the center comes out clean.

  6. Variations: Add 1/2 cup chopped walnuts and dates for texture; or sprinkle chopped, crystallized ginger along the length of the bottom of the pan.
