Dark pumpkin bread that substitutes half the flour with ground pumpkin seeds. Satisfies hunger for several hours. Serving is 20% of baby loaf pan. Makes 6 baby loaf pans

Recipe Ingredients for Pumpkin bread with ground pumpkin seeds

3 cups ground hazelnuts
3 1/2 cups unbleached all purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
3 cups canned pumpkin
3/4 cup sugar
3/4 cup dark brown sugar
1 cup canola oil
4 large eggs
3/4 cup buttermilk

Recipe Directions for Pumpkin bread with ground pumpkin seeds

  1. Preheat oven to 350. Spray 6 baby loaf pans. Roast seeds until begin to color, about 20 min. Cool, then coarsely grind with processor.

  2. Combine flour, baking powder, baking soda, salt,spices in med bowl; whisk to blend. Mix in ground pumpkin seeds. Using electric mixer, beat pumpkin and both sugars in large bowl until blended. Gradually beat in oil, then eggs one at a time. Ad 1 tea minced fresh ginger if desired. Stir in dry in 4 additions alternately with buttermilk.
