I modified this recipe from the original Libby's Pumpkin Bread recipe. The original recipe had 260 calories a grade of C+. This version has 178 calories and a grade of B.

Recipe Ingredients for Pumpkin bread ala Michaela

2 cups all-purpose flour
1 cups whole wheat flour
1 tablespoon pumpkin pie spice
2 teaspoon pumpkin pie spice
2 teaspoons baking soda
1 1/2 teaspoons salt
2 cups granulated sugar
15 ounces Pumpkin
2 eggs
2 egg whites
1/2 cup canola oil
1/2 cup applesauce
1/2 cup water
1/2 cup cranberries

Recipe Directions for Pumpkin bread ala Michaela

  1. PREHEAT oven to 350 F. Grease and flour two 9 x 5-inch loaf pans.

  2. COMBINE flour, pumpkin pie spice, baking soda and salt in large bowl.

  3. Combine sugar, pumpkin, eggs, oil and water in large mixer bowl; beat until just blended.

  4. Add pumpkin mixture to flour mixture; stir just until moistened. Fold in cranberries.

  5. Spoon batter into prepared loaf pans.

  6. BAKE for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

  7. Recipe makes two loaves.

  8. FOR THREE 8 x 4-INCH LOAF PANS:

  9. PREPARE as above. Bake for 55 to 60 minutes.

  10. FOR FIVE OR SIX 5 x 3-INCH MINI-LOAF PANS:

  11. PREPARE as above. Bake for 50 to 55 minutes.
