Bran muffins with a touch of pumpkin - any fruit can be subsitituted and these will still work.

Recipe Ingredients for Pumpkin bran muffins

1 cup all bran cereal
1 cup wheat bran
1 1/2 cup plain yogurt
2 cups whole wheat flour
1/4 cup brown sugar
1 tbs baking powder
2 tsp baking soda
1 tsp vanilla
1 egg
1/2 cup milk
2 cup pumpkin
1/4 cup canola oil

Recipe Directions for Pumpkin bran muffins

  1. mix all-bran, wheat bran, yogurt and set aside for 10 min.

  2. mix flour, powder, soda, brown sugar and set aside

  3. add vanilla, milk, egg, oil and pumkin pie spice (1 tsp) to yogurt mixture.

  4. combine wet and dry ingredients

  5. bake in cupcake tins at 375 for 18 min or until done (toothpick test)
