Pumpkin Bran Muffins from elizabet2083 In Response to BATTLE: Cereal on Runner's World This made about 16 muffins for me.

Recipe Ingredients for Pumpkin Bran Muffins

1 1/2 cup of all-purpose flour
3/4 cup bran cereal
1 teaspoon of baking soda
3/4 teaspoon of salt
1 teaspoon of ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon of baking powder
2 eggs
1 1/2 cups of sugar
1/2 cup buttermilk
1 cup of canned pumpkin
1/3 cup of vegetable oil (or half unsweetened applesauce)

Streusel Topping:
1/2 cup packed brown sugar
1/3 cup of all purpose flour
1/8 teaspoon salt
1/4 cup of butter (1/2 a stick of butter)
1/2 cup oats

Recipe Directions for Pumpkin Bran Muffins

  1. For topping:

  2. Combine the brown sugar, oats, flour, and salt in a large bowl; toss to blend. Add butter and mix with fingertips until the mixture forms moist clumps. Refrigerate while preparing the muffins.

  3. For muffins:

  4. Preheat oven to 325. Butter muffin pan. Combine the first 8 ingredients in a medium bowl and stir to blend well. Add eggs, sugar, and buttermilk to the bowl and mix well. Fold in dry ingredients until just fully incorporated. Divide the batter evenly among the muffin tins. Sprinkle the tops of the muffins with the streusel topping. Bake for 20-25 minutes, or until a knife inserted into the muffins comes out clean. Remove from the oven and allow to cool in the muffin tins for at least 5 minutes. Place on a cooling rack to finish cooling and enjoy! (Store in an airtight container preferrably in the refrigerator).
