Pumpkin bran muffins that are nearly sugar free & vegan.

Recipe Ingredients for Pumpkin Bran Muffins

1 cup whole wheat flour
1/2 cup wheat bran
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp pumpkin spice
1/3 cup Splenda no calorie
3/4 cup vanilla soy milk
2 tbsp vegetable oil
1 cup canned pumpkin

Recipe Directions for Pumpkin Bran Muffins

  1. Preheat oven to 350dF.

  2. Combine flour, wheat bran, baking powder, baking soda, salt, Splenda, & pumpkin spice. Mix well.

  3. Combine soy milk, oil & pumpkin in separate container. Mix well.

  4. Add wet ingredients to dry ingredients. Mix well.

  5. Fill prepared muffin tins 3/4 full & bake for 15 minutes or until toothpick inserted in center comes out clean.
