Recipe Ingredients for Pumpkin Bran Muffins

1 c Bran
1/2 c Ground Flax Seed
1 c Fat Free Evaporated milk
1 c Pumpkin, canned
1/2 c Molasses
1 Egg, beaten
1 tsp Salt
1 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Ginger
1/4 tsp Allspice
1/4 tsp Cloves
1 c Flour
1 tsp Baking Powder

Recipe Directions for Pumpkin Bran Muffins

  1. Pre-heat oven to 400.

  2. Combine first 3 ingredients in medium bowl and let stand 10 minutes. Add Pumpkin, molasses, and egg and mix well. In a large bowl, combine remaining ingredients. Add wet ingredients and raisins and stir to combine. Lightly grease muffin pan with cooking spray. Fill each 3/4 full and bake 15 minutes.
