1 cup pumpkin or sweet potato puree
1 cup wheat bran
3 large egg whites
3/4 cup nonfat buttermilk or plain nonfat yogurt
1/3 cup molasses
1 1/4 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 cup raisins

Recipe Directions for Pumpkin Bran fat free muffins

  1. Heat the oven to 500 F.

  2. In a large mixing bowl, combine the pumpkin or sweet potato puree, wheat

  3. bran, egg whites, buttermilk or yogurt, molasses. Stir with a

  4. whisk until smooth.

  5. In a separate bowl, whisk together the flour, baking powder, baking soda,

  6. cinnamon, and ginger.

  7. Stir the wet ingredients into the dry, mixing just enough to moisten, about

  8. 30 seconds. Fold in the raisins.

  9. Fill the cups of a 6-cup nonstick muffin tin two-thirds full Place the tin

  10. in the oven. Lower the temperature to 400 F. Bake until the tops are

  11. golden brown and springy to the touch and a knife or toothpick inserted in

  12. the center of a muffin tests clean, about 30 minutes. Let the tin cool on

  13. a cooling rack for 10 minutes before removing the muffins. To store, let

  14. the muffins cool completely on the rack. Seal them inside a plastic bag,

  15. and refrigerate or freeze.
