Recipe Ingredients for Pumpkin Black Bean Chili

1 medium onion, chopped
1 sweet yellow pepper, chopped
2 tablespoons olive oil
3 garlic cloves, minced
3 cups chicken broth
30 oz canned black beans , rinsed and drained
14 oz (2 1/2 cups) turkey , cubed
15 ounces canned pumpkin
14 1/2 oz canned diced tomatoes , undrained
2 teaspoons dried parsley flakes
2 teaspoons chili powder
1 teaspoons dried oregano
1 teaspoons ground cumin
1/2 teaspoon salt

Recipe Directions for Pumpkin Black Bean Chili

  1. In a large skillet, saute the onion, yellow pepper in oil until tender. Add garlic; cook 1 minute longer. Transfer to a 5-qt. slow cooker; stir in the remaining ingredients. Cover and cook on low for 4-5 hours or until heated through.

  2. Yield: 10 servings (2-1/2 quarts).

  3. Mine yielded 9 one-cup servings.

  4. Suggestions: This is delicious on its own but can be served over macaroni, brown rice or with a side of crusty bread to make it more filling.
