I have a silicone baking sheet that is meant for mini brownies. Im always looking for tasty treats that I can make in mini sizes. This makes 48 Pumpkin bites, which is similar to pumpkin bread. You can use white flour, but I had spelt and flax seed on hand.

Recipe Ingredients for Pumpkin Bites

3/4 cup sugar
1 cup canned pumpkin
1/2 cup applesauce
1/2 cup water
1/2 cup egg beaters
1 cup spelt flour
2/3 cup flax seed meal
1 tsp. baking soda
1 tsp. cinnamon
3/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. nutmeg
1/4 tsp. cloves
1 scoop protein powder (vanilla)

Recipe Directions for Pumpkin Bites

  1. Mix your wet ingredients and add your dry. Mix well!

  2. I bake it in a mini brown square pan, which will result in 48 total squares. Bake at 350 for about 14-18 mins.

  3. You can also make muffins.
