An awesome roasted vegetable soup. Garnish with fat free greek yogurt or sour cream and polenta croutons.

Recipe Ingredients for Pumpkin Beet Soup

3 c pumpkin (yield from one small cooking pumpkin)
1 med onion
3 large carrots
1 1/2 c beets
1 stalk celery
58 oz vegetable broth
2 c water
1 tsp turmeric
1 tsp ground rosemary
2 tsp salt
1 tsp ground pepper
1 tsp nutmeg

Recipe Directions for Pumpkin Beet Soup

  1. Preheat oven to 450F.

  2. Peel and chop the pumpkin into 1-2" cubes.

  3. Chop the onion and beets into 1/8ths, roughly chop the carrots.

  4. Place all vegetables onto a foil-lined cookie sheet, spray with olive oil, season with salt and pepper. Roast for 45 minutes, or until the edges of the vegetables begin to turn brown.

  5. Spray the bottom of the stock pot with oil, sautee celery.

  6. Once the vegetables are finished cooking, add to the stock pot.

  7. Add vegetable broth/stock

  8. Bring to a boil, then simmer for 15 minutes.

  9. Use an immersion blender to blend the soup. Add water as needed for texture.

  10. Season to taste.
