Deliciously spiced and topped with cream cheese Frosting, these traditional bars are great teamed with a mug of hot apple cider.

Recipe Ingredients for Pumpkin Bars

2 cups all purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon cloves
1 cup oil
16 oz. (2 cups) pumpkin
4 eggs
1/2 cup chopped nuts
1/2 cup raisins

Recipe Directions for Pumpkin Bars

  1. Heat oven to 350cF. Grease 15xlOxl-inch baking pan. In large bowl, combine all bar ingredients except nuts and raisins; beat at low speed until moistened. Beat 2 minutes at medium speed. Stir in nuts and raisins. Pour into greased pan.

  2. Bake at 350F. for 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely.

  3. In small bowl, combine all frosting ingredients; beat until smooth. Frost cooled bars. Cut into bars. Store in refrigerator.

  4. HIGH ALTITUDE:

  5. Above 3500 Feet: Decrease baking soda to 1/2 teaspoon. Bake at 375F. for 30 to 35 minutes.
