Delicious Pumpkin Bars with Cream Cheese Icing from Taste of Home Winning Recipes cookbook. (NOT healthy!)

Recipe Ingredients for Pumpkin Bars

4 eggs
1 2/3 cup sugar
1 cup vegetable oil
15 ounces solid pack pumpkin
2 cups all-purpose flour
2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1 tsp salt
3 ounces cream cheese
2 cups powdered sugar
1/4 cup butter
1 tsp vanilla

Recipe Directions for Pumpkin Bars

  1. In a mixing bowl, beat the eggs, sugar, oil & pumpkin. Combine the flour, cinnamon, baking powder, baking soda & salt; gradually add it to the pumpkin mixture & mix well. Pour into an ungreased 15X10 inch baking pan. Bake at 350 degrees for 25-30 minutes (ours took the full 30) or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack.

  2. For icing, in a small mixing bowl, beat the cream cheese, sugar, butter & vanilla. Add enough milk to achieve desired consistency for spreading. Spread over bars. Store in the refrigerator. Yield: 2 dozen.
