Recipe Ingredients for Pumpkin Banana Load

1 cup whole wheat flour
1 cup all-purpose flour
1/2 cup ground flax seed
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup brown sugar
1 tsp cinnamon
6 oz (170 g) g) (170 g) Yogurt (oz)
1 cup shredded zucchini
1 cup Pumpkin
1 cup banana, mashed
1/4 cup vegetable oil
1 egg
1/2 cup walnuts, chopped
1/2 cup dark chocolate chips

Recipe Directions for Pumpkin Banana Load

  1. Preheat oven to 350 degrees F

  2. Spray 9 X 5 loaf pan lightly with cooking spray.

  3. Combine all dry ingredients in a medium bowl. Mix well.

  4. In large bowl, whisk together wet ingredients until well blended.

  5. Add dry ingredients and mix using a wooden spoon until dry ingredients are moistened. Fold in walnuts and chocolate chips.

  6. Spoon batter into prepared pan. Bake on middle rack for 50 to 60 minutes or until wooden skewer comes out clean when inserted in centre of loaf.

  7. Wrap leftovers well with plastic wrap and store in fridge for up to 5 days or it may be frozen.
