Recipe Ingredients for Pumpkin Banana Bread

1/4 c. butter
1/2 c pumpkin, canned
2 eggs
1 c. banana, mashed
1/2 tsp. salt
1 tsp. baking soda
2 c. whole wheat flour
0.33 c. hot water
1/2 c. chopped walnuts
1/2 c. coconut, shredded
1/2 c. dried cranberries

Recipe Directions for Pumpkin Banana Bread

  1. In large bowl, stir together melted butter and sugar. Mix in lightly beaten eggs and banana, blending until smooth.

  2. In another bowl, stir together flour, salt, baking soda, and whole wheat flour until thoroughly blended. Add to banana mixture alternately with hot water. Stir in nuts. Spoon batter into a greased and floured loaf pan.

  3. Bake @ 325* oven for 1 hr, 10 min. or until tester comes out clean. let cool for 10 minutes, then turn out onto rack and let cool completely.

  4. Makes 1 loaf.
