Recipe Ingredients for Pumpkin Baked Ziti (Cashew ricotta separate)

3/4 lb uncooked ziti
2 yellow onions
2 tbsp olive oil
1 tbsp brown sugar
1/4 tsp nutmeg
15 oz pumpkin puree
1/4 cup vegetable broth
2 1/2 cups bread crumbs
1/3 cup walnuts
1/4 cup Earth balance
2 tsp sage
1 tsp oregano
1/2 tsp smoked paprika
1/2 tsp salt

Recipe Directions for Pumpkin Baked Ziti (Cashew ricotta separate)

  1. Cook pasta.

  2. Saute onions in olive oil.

  3. Mix previously prepared cashew ricotta with remaining wet ingredients.

  4. Melt Earth Balance in skillet and toast bread crumbs, walnuts, and herbs.

  5. Assemble in casserole dish and bake at 375 for 30 min.
