This is a surprising spin on pumpkin soup- lively and warming, it gets all the senses in a wonderful dance of flavor! (serving size is 1.5 cups)

Recipe Ingredients for Pumpkin Asian Flavored Soup

3 1/2 cups Pumpkin, 2 medium cans
1 Onion
1 tbs Sesame Oil
1/4 oz ginger root
2 cups Carrots, chopped
1/4 cup Basil Leaves, fresh
1/8 cup Lime Juice
1/2 cup Raisins
2 cups Water
1/4 teaspoon Black Pepper

Recipe Directions for Pumpkin Asian Flavored Soup

  1. Chop the onion, carrots, and ginger.

  2. In a soup pot, saute the onions in the toasted sesame oil until they begin to get translucent. Add the carrots and ginger.

  3. Add the raisins and basil. Saute until raisins are soft, you may need to add some water.

  4. Add pumpkin and lime juice. Season with black pepper.

  5. Add the water Let the soup simmer for a 15-30 minutes, melding flavors.

  6. Puree the entire mix in the blender- final version will be textured but blended.

  7. Return to stove for 15 minutes to meld flavors more.

  8. Serve and eat!
