Recipe Ingredients for Pumpkin applesauce muffins

1 1/3 c. dried cherry
1 3/4 c. all purpose flour
2 c whole wheat flour
1 c. oatmeal
1 1/2 c white sugar
1 1/2 c brown sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
1 1/2 tsp nutmeg
1 1/2 tsp cinnamon
1 1/2 tsp ground cloves
3 eggs
3/4 c buttermilk
1/2 c egg white
1 tbs egg white
3 tbs flax seed
1 c. applesauce
29 oz. pumpkin

Recipe Directions for Pumpkin applesauce muffins

  1. mix dry (except oatmeal)

  2. mix wet + oatmeal, let sit 15 min. to soften oatmeal

  3. mix wet and dry, stir in cherries

  4. fill muffin tin 3/4 way full

  5. oven @ 375
