3 large Egg, Whole
14 grams SPLENDA No Calorie
0.75 cup Sugars, Granulated
0.4 cup Oil, Vegetable Corn, Salad Or Cooking
1/2 cup Unsweetened Applesauce
12 oz Pumpkin
0.5 cup unsifted, dipped Wheat Flour, White, Cake, Enriched
1 cup All Purpose Flour
1.5 Teaspoon Baking Powder
0.75 tsp Leavening Agents, Baking Soda
0.75 tsp Salt, Table
1.5 tsp Cinnamon, Ground
0.75 tsp Ginger, Ground
0.25 tsp Nutmeg, Ground

Recipe Directions for Pumpkin Applesauce cake

  1. Preheat oven to 350. Cut small pie pumpkin in half, de-seed, and bake cut side down for about 30 minutes, or until pumpkin is tender. Remove from oven and let cool. Once cool, puree the pumpkin. Keep oven going.

  2. Wash, core, and seed apples. Place in a heavy saucepan in one inch of water, bring to a boil, reduce heat, cover, and simmer until apples are very tender. Remove from cooking liquid and puree. Add cooking liquid if need be.

  3. Once pumpkin puree and applesauce are cool, mix together the purees, eggs, sugar, splenda, and eggs.

  4. In a separate bowl, mix together flours, baking powder, baking soda, salt, and spices.

  5. Add the dry ingredents to the wet, mix gently until combined.

  6. Pour batter into a greased and floured bundt pan and bake for about 30 minutes, or until a cake tester comes out clean.
