A warm Fall Soup of pumpkinn and apples and vegetable broth

Recipe Ingredients for Pumpkin and Apple Soup

40 oz Pumpkin
2 tbsp Extra Virgin Olive Oil
1 medium Onions
2 tsp Ginger Root
2 medium apple Apples
1 tbsp Honey, Strained Or Extracted
0.25 tsp Cinnamon, Ground
0.25 tsp Cloves, Ground
4 cup Vegetable Broth

Recipe Directions for Pumpkin and Apple Soup

  1. Warm the olive oil in large pot over medium heat. Add onion and ginger and saute until softened, about 5 minutes.

  2. (Cook the pumpkin--cut in half, pull out seeds and strings and bake at 375 for 45 min to 1 hour then scoop out and chop)

  3. Add the pumpkin, 1 1/4 cups diced apple (reserve a little as garnish), the honey, cinnamon and ground cloves (pinch of each) and cook stirring for 1 minute. Add the vegetable broth and simmer 10 minutes.

  4. Carefully transfer to a blender or food processor and puree until smooth (be sure to vent since it is warm). Season to taste with salt and pepper. Serve garnished with diced apple and sprigs of rosemary.
