Recipe Ingredients for Pumpkin Apple Bread

1 1/2 cup flour, all purpose
1/2 cup spelt flour
1/4 cup splenda
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp pumpkin pie spice
3 tbsp egg substitute
1 cup low fat buttermilk
1 apple, peeled cored and grated
1/2 cup pumpkin puree

Recipe Directions for Pumpkin Apple Bread

  1. Preheat oven to 350 degrees.

  2. In medium bowl, mix together flour, splenda, baking powder, baking soda, salt and pumpkin pie spice. In a small bowl, beat the egg sub, add the buttermilk, apple and pumpkin. Pour over the flour mixture until just blended.

  3. Spoon into a loaf pan.

  4. Bake until a toothpick in the centre comes out clean, approx 1-1 1/4 hr. Cool in pan on a rack 10 minutes and remove from the pan.
