Recipe Ingredients for Pumpin Pancakes

1 cup flour
1 cup wheat flour
2 tbsp brown sugar, splenda
2 tbsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 tsp ginger
1/2 tsp nutmeg
1 1/2 cup skim milk
4 ounces pumpkin, canned
1 egg white
2 tbsp canola oil

Recipe Directions for Pumpin Pancakes

  1. In a large bowl, combine the first 8 ingredients. Combine the milk, pumpkin, egg white, and oil; stir into dry ingredients just until moistened.

  2. Pour batter by 1/4 cupfuls onto a hot griddle coated with nonstick cooking spray; turn when bubbles form on top. Cook each until second side is golden brown.
