For a taste of Thanksgiving any time!

Recipe Ingredients for Pumkpin Muffins (or Loaf)

1 1/2 cups all-purpose flour
1 1/4 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup pumpkin puree (not pumpkin pie filling)
1 cup brown sugar, packed
1/2 cup buttermilk
1 egg
2 tbsp butter, softened

Recipe Directions for Pumkpin Muffins (or Loaf)

  1. Preheat over @ 350 F (or 175 C)

  2. Sift dry ingredients together and mixx wet ingredients together in larger and sperate bowl. Pour into muffin tin (or make into a bread if you want).

  3. As bread bake for 1 hr, as muffins about 20-25 minutes (or when toothpick comes out clean).

  4. I don't know how to replace some of the regular flour for whole wheat (the proportions), but this would make it higher in fiber. You can also replace the butter with more pumpkin, but I put it here for people who don't care, since it' not that big of a difference in fat (maybe 1 or 2 grams).
