Waffles that taste like pumpkin bread! Good to eat cold too.

Recipe Ingredients for Pumkin Waffles

2 1/2 cups flour, unbleached all purpose
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 cups skim milk
15 ounces Libby Solid Packed Pumpkin
1/3 cup olive oil
1/3 cup Domino light brown sugar
2 teaspoons vanilla extract

Recipe Directions for Pumkin Waffles

  1. Pre-heat belgian waffle iron according to manufacturer's instructions (Salton non-stick belgian waffle iron in my kitchen)

  2. Sift together dry ingredients (the first 8 ingredients)

  3. In blender or separate bowl combine milk, pumpkin, sugar and vanilla extract ... add oil last as blender runs if using blender.

  4. Pour wet ingredients into dry ingredients and combine.

  5. Cook waffles according to waffle iron instructions (NOTE: You may need to brush iron with small amount of butter or oil to keep waffles from sticking)
