the original recipe is from Betty Crocker and calls for sugar, whole milk and vegetable oil. I substituted Splenda, 1% milk and egg beaters to save 55 cals and 5 grams of fat per muffin

Recipe Ingredients for Pumkin - Spice Muffins

2 cups original bisquick
1/2 cup canned pumpkin
1/4 cup splenda baking blend
1/4 cup 1% milk
1/4 cup unsweetened applesauce
1 tablespoon pumpkin pie spice
1/2 teaspoon ground cinnamon
1/4 cup egg beaters

Recipe Directions for Pumkin - Spice Muffins

  1. Heat oven to 400 degrees. Grease bottoms only of muffin cups or place paper baking cups in each muffin cup

  2. Stir all ingredients until jut moistened

  3. Bake 15 to 20 mins or until golden brown. Remove immediately from pan.
