COOKS This does not include the brine which is done before using: 1 cup salt 1/2 cup sugar 3 tbs liquid smoke. Mix these ingredients in water and submerge pork. Cover with plastic wrap and refrigerate 2 hours.

Recipe Ingredients for Pulled Pork

2270 grams Pork Shoulder Butt Roast
4 tsp Table Salt
1 []
4 tsp Natural Hickory
2 oz Yellow Mustard
2 tbsp Pepper, Black
2 serving Paprika Smoked
4 7/10 grams Cayenne Pepper

Recipe Directions for Pulled Pork

  1. Brine

  2. Combine dry ingredients in one bowl and wet in another.

  3. Adjust oven to lower middle position and heat to 325F

  4. Remove pork from brine, dry thoroughly with paper towels. Rub mustard mixture over entire surface. Sprinkle entire surface with spice mixture. Place pork on wire rack set inside foil-lined backing sheet. Place a piece of parchament paper over pork then cover with aluminum foil, sealing edges to prevent moisture from escaping. Roast pork for 3 hours.

  5. Remove pork from oven, discard foil and parchament. Carefully pour off liquid in bottom of pan and reserve for sauce. Return pork to oven and cook uncovered, until well browned, tender and internal temprature reaches 200 degrees about 1 1/2 hours. Transfer pork to serving dish ten with foil and let rest 20 minutes

  6. shred pork with forks into bite-size pieces. Toss with 1 cup sauce and season with salt and pepper.
