Pulled Chicken Recipe

Slow cooked chicken, shredded for use in sandwiches.

Recipe Ingredients for Pulled chicken

450 g Boneless Skinless Chicken Breast
2 tbsp ketchup
1 tbsp prepared mustard
2 tbsp apple cider vinegar
1 tbsp Coriander Seed
1 tbsp cumin seed
1/4 cup open pit barbecue sauce
1 tbsp salt
2 cups water

Recipe Directions for Pulled chicken

  1. Toast (ground) Coriander and Cumin in the bottom of a dry large pot preheated to medium high for about ten two fifteen seconds until fragrant. (This recipe can be made in a crock pot very easily, but spices would need to be toasted separately and then added to crock pot.)

  2. Add water, ketchup, mustard (I prefer Dulcet's Moroccan Mustard, but any robust mustard like Dijon will work), vinegar, and barbecue sauce of your choice.

  3. Add chicken and reduce to simmer. Place lid on pot and simmer until chicken is fully cooked and tender (at least 40 minutes).

  4. Shred chicken with two forks in pot

  5. Let sit in juices for another 5 minutes to absorb flavor.

  6. Serve in what fashion you prefer.
