Chicken is simmered until tender in your favorite beer, served over a corn and rice mix, with a side of refried beans. Garnish with a dallop of lowfat sour cream or some shredded reduced fat cheese!

Recipe Ingredients for Pulled Chicken with Fajita Veggies, Mexican Rice, and Refried Beans

1 1/2 lb chicken thighs, meat only
1 large red onion, divided
1 clove garlic, minced
2 bell peppers, sliced, divided
1 hot pepper
8 oz. sliced mushrooms
8 oz. tomato sauce
12 oz. beer
2 tbsp. Promise spread
2 cups brown rice, uncooked
1 cup frozen corn
1 cup fat free refried beans
2 tbsp. lime juice
1 tsp. chili powder
1 tsp. cilantro
1 tsp. black pepper

Recipe Directions for Pulled Chicken with Fajita Veggies, Mexican Rice, and Refried Beans

  1. Brown the chicken thighs with half the red onion, sliced. Add the garlic.

  2. Saute the peppers, mushrooms, and hot pepper with the chicken and onions. Remove the vegetables and set aside.

  3. Pour the beer over the chicken. Cover and let simmer.

  4. Pull apart the chicken with two forks, until it's in fine shreds.

  5. Add the tomato sauce, half of each of the seasonings, and stir. Cover and let simmer.

  6. Prepare the rice according to package.

  7. Once the rice is cooked, add in the Promsie, corn, other vegetables, and remaining seasonings. Fry and stir.

  8. Heat the beans in a small pan.

  9. To plate: lay down some of the rice mixture, and spoon the chicken and sauce over top. Serve refried beans on the side.
