Recipe Ingredients for puffy egg breakfast

3 eggs, mixed up
1 1/2 oz sourdough bread
4 tbsp lowfat milk
1/4 cup mashed banana
1/4 cup raisins

Recipe Directions for puffy egg breakfast

  1. mix eggs until creamy.

  2. add milk and mix thoroughly.

  3. add bread broken up into pieces, mix until soaked through.

  4. add banana and raisins, mixing thoroughly.

  5. put mixture in 9 inch fry pan sprayed with cooking spray, on medium heat.

  6. cook almost as if it's a pancake, or scramble it up, or just let it cook and puff up a bit, then flip it.

  7. serves 2 good-size servings, or four side servings with salads.
