My personal favorite comfort food! The salt, nutmeg, vanilla, and butter are all estimates, since I usually just wing it and put in different amounts, so please change to preference.

Recipe Ingredients for Puff Pancakes

0.5 cup Wheat Flour, White, All-purpose, Enriched, Bleached
2 large Egg, White
0.5 tbsp Nutmeg, Ground
0.5 tbsp Salt, Table
1 tbsp Vanilla Extract
0.5 cup Soymilk Vanilla
2 tbsp Butter

Recipe Directions for Puff Pancakes

  1. Preheat oven to 425F

  2. Put 1/2 tbsp butter in 4 separate custard cups, heat for 5 mins

  3. Whisk milk, eggs, and vanilla together

  4. Add flour, salt, and nutmeg, stir thoroughly

  5. Pour equal amounts in each cup and cook for 15 mins
