This "pancake" is baked in the oven. It "puffs up" as it cooks.

Recipe Ingredients for Puff Pancake

2 tbs Butter
1/2 cup flour
1/2 cup milk
2 eggs
1/2 tsp kosher salt

Recipe Directions for Puff Pancake

  1. Heat oven to 425

  2. Melt the 2 Tbs butter in the oven in a 8x8 or 9x9 baking dish.

  3. Mix with mixer or blend the remaining ingredients until smooth. You will have a wet batter.

  4. Pour into baking dish on top of melted butter.

  5. Bake for about 15 minutes until puffy and golden.

  6. Recipe can be easily doubled for a 9x13 pan. May require longer cook time.
