Puerto Rican taste. A bit smoother than the original Limbers.

Recipe Ingredients for Puerto Rican Limber Ice Cream

1 1/3 c sugar
1 T cornstarch
1/4 t salt
18 oz evaporated milk
12 oz water
2 eggs
1 c milk
1/2 T vanilla

Recipe Directions for Puerto Rican Limber Ice Cream

Combine sugar, cornstarch & salt. Slowly add evap milk first to make a paste, then to make a non-lumpy liquid. Add water and cook until thickened slightly. Beat eggs and combine with a little hot liquid. Then pour into pot. Cook until thickened a bit more. Add milk (or cream) and vanilla and freeze in ice cream maker.
