A great recipe to use up yolks when making meringues.

Recipe Ingredients for Pudding: Rich Chocolate

3 ounces unsweetened chocolate
1 cup fat free milk
1 cup water (or 2 cups milk or almond milk)
1 cup sugar
1 tablespoon flour
1/4 teaspoon salt
5 egg yolks
1/2 teaspoon Vanilla

Recipe Directions for Pudding: Rich Chocolate

  1. Melt chocolate over a double burner, remove from heat. Heat the milk (and water) until scalding. Mix the sugar, flour and salt and add to chocolate stirring to combine. Add 1 cup hot milk slowly, stirring constantly and bring to a boil directly over heat. Remove from heat.

  2. Slowly add remaining hot milk to yolks whisking to combine. Add yolk mixture to chocolate mixture and cook over a double burner for 3 minutes stirring constantly. Remove from heat and stir in vanilla.
