Recipe Ingredients for Pudding - Low Fat Chocolate Pudding

1/3 cup cornstarch
1/3 cup sugar
1/3 cup cocoa powder
3 1/2 cup skim milk
1 tsp vanilla extract
1 pinch of salt

Recipe Directions for Pudding - Low Fat Chocolate Pudding

  1. sift together cornstarch, sugar and cocoa powder into a medium saucepan. Whisk in milk gradually. Place over medium heat, and cook until mixture thickens and boils, whisking constantly, about 7 minutes. When mixture boils, reduce heat to medium low, and continue to cook for 2 minutes stirring constantly.

  2. Remove from heat. Taste, and add salt and espresso powder if desired, and add vanilla extract. Stir to combine, then pour into a clean, glass bowl. Cover with plastic wrap, and allow the wrap to sit directly on top of the pudding to prevent a skin from forming.

  3. Cool for about 30 minutes, then transfer to refrigerator until cold, about 2 hours.
