An untraditional take on potato soup. It's delightfully cheesy with a hint of beer and garlic served with bacon crumbled on top. Very filling.

Recipe Ingredients for Pub Potato Soup

12 oz Beer, Regular
3 chicken boullion cubes
5 cups water
5 small potatos
8 oz sharp cheddar cheese
4 oz Cheeses, Low Fat Mozzarella
1 salt
1 pepper
1 can cream of celery soup
26 g of bacon
1 tsp garlic
1 dash of cayenne pepper
1/4 cup sour cream

Recipe Directions for Pub Potato Soup

  1. Peel and cube potatoes and set to the side.

  2. Fry bacon in a soup pot until crispy. Pour out all but 2-3 tbsp bacon grease. Set the bacon aside.

  3. Add cubed potatoes and garlic to the soup pot with bacon grease along with one beer of your choice. Also add water, chicken boullion cubes, cream of celery soup, and salt and pepper to taste.

  4. After the soup has cooked down on medium-high heat and the potatoes are tender, remove from heat and add sour cream, chedder & mozarella cheeses. Taste again to be sure it is properly seasoned.

  5. Serve immediately with crumbled bacon on top of each bown of soup. You could also add some chives or additional sour cream to top off the soup. Enjoy!
