Baked Butter beans in tomato sauce

1 cup onion
1 cup celery
1 cup carrots
1 cup tomato sauce
1 cup water
14 1/2 oz diced tomatoes
45 3/4 oz butter beans
1/2 cup olive oil
1/2 cup parsley
1 tsp salt
1 tsp pepper

Chop all the vegetables. Put in a 15x10 roasting pan. Preheat oven to 350 F. Add the canned butter beans after rinsing them in cold water, the diced tomatoes, tomato sauce, water, salt and pepper, olive oil, and bake at 350 F for one hour.
