I use the bread machine for mixing the dough and for its first rising.

Recipe Ingredients for Psomi Bread

1 1/2 cups water
1 tbsp yeast
2 tbsp honey
1/4 cup olive oil
2 tsp salt
1/4 cup sesame seeds
2 cups unbleached flour
2 cups stone ground whole wheat flour
1/4 cup sesame seeds
1/2 egg

Recipe Directions for Psomi Bread

  1. Place ingredients except for the egg and one 1/4 cup of sesame seeds into bread machine and run through the "Dough" cycle.

  2. On floured surface, turn out dough, divide in half and shape into two small loaves.

  3. Place in oiled (sprayed) loaf pans, cover and let rise in a warm place until nearly doubled.

  4. Bake in preheated oven at 375 for 20 minutes. Remove from oven, brush top with egg glaze (egg and 1/2 TBSP water). Immediately sprinkle with remaining sesame seeds.

  5. Return to oven and bake another 5 minutes, or until bottoms sound hollow when tapped.

  6. Cool on wire rack.
