Recipe Ingredients for P's Breakfast Quiche - low carb

3 large eggs
3 egg whites
3 oz cheddar cheese, fat free
5 oz frozen spinach
6 tbsp onions
6 oz veggie sausage (Gimme Lean)

Recipe Directions for P's Breakfast Quiche - low carb

  1. Beat whole eggs until frothy, salt and pepper to taste.

  2. Whisk whites separately until firm peaks form; fold well into whole eggs.

  3. Brown onion, crumble and brown sausage, thaw and dry spinach.

  4. Mix onion, sausage, spinach together with 2/3 cheese.

  5. Line muffin tin w/ paper liners.

  6. Add small amount egg to each cup. Add ~2Tbsp meat mix to each cup, pressing in.

  7. Top with remaining egg and cheese.

  8. Bake at 350 for 15 min (until brown).

  9. Feed left-over yolks to Beagles!
