Chicken Breast stuffed with provolone cheese and chopped olives.

Recipe Ingredients for Provolone- and Olive-Stuffed Chicken Breast

1 lb boneless skinless chicken breast
8 tsp olives, chopped
4 slices provolone cheese
1/4 cup cornmeal
1/2 tsp salt
1/8 tsp black pepper, freshly ground
2 tsp olive oil
1 egg white

Recipe Directions for Provolone- and Olive-Stuffed Chicken Breast

  1. Preheat oven to 400 degrees

  2. Stuff chicken breast with provolone cheese and chopped olives

  3. Mix cornmeal, salt, and pepper

  4. Dip stuffed chicken breast in egg, then in cornmeal/salt/pepper mixture

  5. Brown on all sides on stove in olive oil

  6. Put browned chicken in small baking dish and bake for about 20 minutes until no longer pink inside (170 degree internal temp)
