2 tbsp Extra Virgin Olive Oil
4 clove Garlic
32 oz Tomatoes, Red, Ripe
32 oz Potatoes, Boiled
0.5 tsp Sea Salt
1/2 tsp Pepper, Black
7 cup (8 fl oz) Water
2 serving Chicken Bouillon Bouillon Cubes
1.5 tsp Rosemary, Dried
2 leaves Spices Whole Bay Leaves
3 tsp Oregano
1 tsp Herbes de Provence
1 tsp Lemon
0.25 oz Chile De Arbol
0.33 cup Parsley
3 Teaspoon Juice

Recipe Directions for Provencale Tomato Potato Stew

  1. In a large saucepan or casserole set over moderate heat, warm the 2 T oil until hot, add the 4 large minced garlic cloves and cook, stirring, 1 minute.

  2. Add the 2 pounds tomatoes, 2 pounds potatoes, and salt and pepper to taste; cook, stirring occasionally, for 5 minutes. Add enough water to cover the vegetables, the2 bouillon cubes, herbs [3 sprigs fresh Rosemary,1T fresh oregano and other herbs listed], lemon pepper, and 3 dried chilies. Add salt and pepper to taste, bring to a boil and simmer, skimming and stirring occasionally, for 15 minutes or until vegetables are tender.

  3. Before serving, discard bay leaves and rosemary sprigs, stir in the parsley and season with the lemon juice.
