Crock Pot Recipe....its YUMMY and easy:) Makes 4 servings I also substitute Pork Loin for the chicken sometimes. Calories are about the same per serv.

Recipe Ingredients for PROVENCALE CHICKEN SUPPER

3.5 serving Diced Tomatoes
3.5 cup Navy Beans
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
16 oz Fresh Boneless Skinless Chicken Breasts
0.5 cup, sliced Onions

Recipe Directions for PROVENCALE CHICKEN SUPPER

  1. 4 (6oz) chicken breasts

  2. 2 tsp dried basil

  3. 1/4 tsp salt, divided

  4. 1/4 tsp pepper, divided

  5. 1 cup diced yellow pepper

  6. 1 (16 oz) can navy beans, drained and rinsed

  7. 1 (14.5 oz) can chunky tomatoes, undrained

  8. Basil leaves

  9. Place chicken in slow cooker; sprinkle with basil, 1/8 tsp salt and 1/8 tsp pepper.

  10. Combine remaining salt, pepper, bell pepper, beans and tomatoes in a bowl; stir well and spoon over chicken.

  11. Cover and cook on high for 1 hour. Reduce heat to low and cook 5 hours.

  12. Recipe does not call for onion but I add it.
