Wonderful veggie soup with french flavor

Recipe Ingredients for Provencal Vegetable Soup

3 quarts water or hamstock
2 cups diced carrots
2 cups diced potatoes
2 cups diced onion
15 oz green beans
15 oz kidney beans
4 oz spaghetti
1 slice bread
3 cloves garlic
4 tbsp tomato paste
1 1/2 tsp basil
1/2 cup parmesan cheese
1/4 cup olive oil

Recipe Directions for Provencal Vegetable Soup

  1. Simmer broth, carrots, potatoes and onions for 40 minutes.

  2. Add beans, spaghetti broken into small pieces, and bread during last 20 minutes

  3. Mix garlic, tomato paste basil and Parmesan in a separate pot

  4. Add the olive oil to the garlic mixture stirring continuously

  5. mix 1 cup soup into the garlic mixture and blend

  6. add to the large pot
