Hearty low-cal vegetable soup. Make a big batch and freeze it in individual (2 cup) portions.

Recipe Ingredients for Provencal vegetable soup

2 cups carrots
1 cup onions
2 cups leeks
2 cups zucchini
2 cups green beans
1/2 cup celery
2 cups potatoes
3/4 cup macaroni
4 tbsp Basil
4 tbsp garlic
4 tbsp olive oil
3/4 cup dried beans

Recipe Directions for Provencal vegetable soup

Saute' onions and leeks in olive oil, add remaining vegetables, a bay leaf, a big pinch of saffron (optional), and enough water to make 6 quarts of soup. When vegetables are tender, stir in chopped basil and garlic, and season to taste with salt, pepper.
