Provencal Salad Recipe

Originally made with Farro, this is a light summer bean and grain salad.

Recipe Ingredients for Provencal Salad

1 cup Kamut
1 cup Flageolet Beans
1 lb tomatoes
1 tbsp fresh lemon juice
2 tbsp cider vinegar
1 tbsp Deli Mustard
1 tbsp Roasted Garlic Mustard
1 garlic cloves
1/2 tsp Salt
1/2 tsp Pepper
1/4 cup scallion, minced
1/4 cup extra virgin olive oil
3/4 lb. Italian (Romano) Beans
4 tbsp fresh basil
5 large green onions
1 tsp dried tarragon
1 tsp dried thyme

Recipe Directions for Provencal Salad

  1. Cook kamut and beans. This should yield 4 cups. Combine kamut, grains and tomatoes in large bowl.

  2. Whisk together the lemon juice, vinegar, mustard, garlic, salt, pepper and olive oil. Toss with the farro and tomatoes and set aside.

  3. Bring a pot of water to a biol. Fill a bowl with ice water. When the water comes to a boil, add a generous amount of salt and add the green beans. Cook 4-5 minutes, until just tender. transfer to the ice water, then drain. Dry on paper towels.

  4. Shortly before serving, add the beans to the grain mixture, along with the chopped herbs. Toss together, taste and adjust seasoning. If desired, sprinkle goat cheese over the top.
