Recipe Ingredients for Provencal Red Lentil Soup

5 cups water
1 bouillon cube
1 cup red lentils
2 cups chopped leeks
3 large carrots, diced
1 1/2 tsp herbs
1 salt and black pepper
2 tbsp Chopped Fresh Parsley

Recipe Directions for Provencal Red Lentil Soup

  1. In a heavy soup pot, bring the water and stock to boil. Add lentils, stir to separate them.

  2. Add leeks, carrots and herbs.

  3. Return to a boil, then reduce the heat and simmer, covered, until the lentils are very soft, about 20 minutes.

  4. Stir frequently and well, as the lentils tend to sink to the bottom.

  5. Stir in salt and pepper to taste, garnish with parsley if you wish and serve hot.

  6. Herb Mixture: "Herbes de Provence" has equal measures of dried basil, tarragon, summer savory, rosemary and marjoram. It may include an equal measure of chervil. Add extra Basil. Can add dried lavender for aromatic.
