Heart Healthy Provencal Green Beans

Recipe Ingredients for Provencal Green Beans

1/4 lb fresh green beans
4 cherry tomatoes, halved
1/8 c purple onion, chopped
2 tsp green olives, chopped
2 tsp parmesan cheese, grated
1/8 tsp thyme
1/8 tsp pepper
2 tbsp water
1 tbsp white wine vinegar
1 clove garlic, chopped
2 tsp olive oil

Recipe Directions for Provencal Green Beans

  1. Wash beans. Trim ends and remove strings. Cut into 1 1/2 inch pieces. Place the green beans in a vegetable steamer and place over boiling water. Cover and steam for 5 minutes until crisp tender. Drain and plunge into cold water.

  2. Saute onion until clear. Stir in tomatoes and olives. Add green beans and heat.

  3. Combine cheese, thyme, pepper, water, white wine vinegar and garlic. Stir well. Add oil and whisk. Pour into pan and heat slightly. Stir and serve.
